Recipe: Autumn Pasta

I went to TJ Maxx the other week and I love browsing through the home section.  They have some great kitchen tools and some good food items too!  I spotted a bag of autumn shaped pasta and just had to get em!  It gave me great inspiration for a recipe!  Check it out!

I try not to buy bottled sauce and create my own base.  I wouldn’t call my sauce authentic at all.  But here is what I start with, a big can of San Marzano Tomatoes (thanks Linda for the tip!) and anchovies with truffles (yum!)

131215-03I chopped up an onion and some garlic and cooked that up with the anchovies.  The anchovies literally melt…I added a pat of butter to creamy up the sauce and added the juice of a lemon to add a zing.

131215-04I made my dish with the canned tomatoes, zucchini, kale and added the mushrooms near the end.  I also cooked down the zucchini and the kale stems down first before adding the kale leaves.

The pasta drained and ready to be put in the sauce!  Cute right??  I cooked the pasta a bit under because I knew it would heat up more in the sauce.

131215-06Here is the dish all done!  It was delicious.  Strong anchovy flavor…lol.  I liked it a lot.  I added a sprinkling of cheese right before eating.  Delish.  Well I tend to cook one recipe to eat for an entire week.  I was pretty sick of it by day 3…haha but it was good nonetheless!  The veggies I used really helps to fill you up.
