Recipe: Copycat Zippy’s Chili

If you’re from Hawaii, you love Zippy’s Chili. There’s no if’s, and’s or but’s about it. And if you don’t like Zippy’s Chili, what is wrong with you? Just kidding, sort of. Well, while I love the chili…I certainly don’t love the price tag. It’s pricey at the restaurant and pricey in frozen form at the grocery store.

I found a copycat recipe the other day and decided to try it out during this whole Covid-19 hysteria. I went to Target to shop for some ingredients…and eureka! They had all the ingredients. Well all but one…pinto beans. No pinto beans. I guess in an emergency, people stock up on beans. So what did I find? Garbanzo beans. Uh oh, how will this go? Well let me tell you, it went quite well! Can I say it tastes exactly like Zippy’s, I don’t think so but I can’t pinpoint what is different (maybe because I didn’t have pinto beans). The kids loved the chili and it tastes even better after sitting a day. Mmm…I really enjoyed it and will totally make this again. No need Zippy’s when you can make it at home!

I doubled the original recipe which is reflected in the recipe I shared below, feel free to cut it in half to still have a good portion!

Fry up that ground beef! No need oil, it’s plenty greasy.
Remove the ground beef and fry up the onions in the leftover grease
(plenty grease, what did I tell you?)
Tomato sauce and pureed garbanzo beans in the pot!
Beef base, garlic salt, chili powder, the kitchen sink, etc.
Looks like Zippy’s Chili yeah??

I asked IG to guess if this was mayo and sour cream, the winner was sour cream but the winning answer was the losing one! It’s mayo!!!

Copycat Zippy’s Chili Recipe

Ingredients:
2 teaspoons vegetable oil (optional)
2 pounds ground beef (I just buy the one from Costco)
2 medium onions, finely chopped
1 (29-ounce) can tomato sauce
2 (15-ounce) cans of low sodium garbanzo beans, pureed, with liquid
2 (16-ounce) cans of light red kidney beans, with liquid
4 teaspoons chili powder
2 tablespoons premium roasted beef base (Better Than Bouillon)
2 tablespoons brown sugar
2 teaspoons garlic salt
1 cup mayonnaise

Directions:
In a large pot, break up and fry up ground beef. Remove ground beef, set aside. Fry up onions in leftover oil on medium heat until limp and golden, add the two teaspoons of vegetable oil if there is not enough grease (honestly, there will be).

Transfer beef back to pot along with tomato sauce, pureed garbanzo beans, light red kidney beans, chili powder, beef base, brown sugar and garlic salt. Bring to a boil, then turn heat down to medium or medium-low and simmer 15 minutes. Stir in mayonnaise and heat through. Taste and correct seasonings.

There’s a Denny’s restaurant right down the street from our Tokyo hotel. Yes, we had to go. I know American restaurants in Japan are always so different from…America that I had to check it out! Let’s dig in!

Absolutely delicious! Well worth the 8 bucks. It’s easy to become an alcoholic at these prices…lol.

Wait a minute, this salad was like the cost of the alcohol! Looks good ah? It was good! Was nice to nosh into a fresh salad in Japan.

I don’t have a lot of corn potage experiences but really liked it. So smooth and mild, it’s delicious!

Looks pretty…dark yeah? It was pretty good. I think we came here after our long wait at the airport for our airport limousine. It wasn’t stellar customer service but it was still better than many experiences here. We didn’t get a set that included drinks at their drink bar but the sangria was plenty good.

What is she up to now?

The finished product looks a bit blah huh? So here’s what I did. I wanted to make one pan of brownies with half regular fudge brownies and half fudge brownies with oreos. So I cut a piece of cardboard and wrapped it with foil while I poured the batter with oreo in, held the cardboard in place as I poured the regular batter in. Then, I just lifted the board out and baked it! The batter is thick enough that it won’t mix into one another…and even if it did…it’s all brownie batter!

I made it for a student training and they ate it all so I’m guessing it was good! Glad it worked!

You’ve heard about the craze. Plant based burgers all over the place. A bit late in posting this but I tried this a few weeks ago. It was good! It tastes just like a whopper, I can’t taste the difference. But honestly, if you think about it, a whopper tastes more like the veggies (onion, tomato, pickles, lettuce) than anything else.

A video blogger did a video about the impossible burger and she asked her location if they fry it on the same grill as the meat burgers and they said they do. WELL, OF COURSE THE IMPOSSIBLE BURGERS WILL TASTE GOOD THEN. Don’t you agree? Would I order it again? Sure! I like these meat alternatives!

3660 on the Rise – Waialae, HI

I had a wonderful birthday dinner last month at 3660 on the Rise and can you believe it, it was my first ever visit! This restaurant has been around for quite a while, not sure what I was expecting. Somehow I envisioned an interior as a big ballroom type venue, not sure why. Not to say they are not fancy! It’s a nice upscale restaurant but nothing too stuffy. I really enjoyed it! The wait staff were attentive and the food was delish. Let’s get on with the review!

This dish looked familiar and it’s no wonder why, Sansei serves a similar dish! Well now that I’ve tried both, I can safely say, this one is the WINNAZ. I think I could eat this dish on its own as an entree.

Now this dish, this dish I can comment on. It was mine oh mine and it was absolutely delicious. Cooked perfectly medium rare and the seasoning was on point! What a great way to celebrate.

Mixed Berry Trifle with Pound Cake

Certainly looks appetizing right? It was pretty good, I enjoyed the fresh berries. I had one really good piece of pound cake and then the rest was blech. Like powdery/flour-y somehow, a bit weird and gritty. I would pass on this dessert.

I wish I could do the heart face emoji for this dessert. It was AMAZING. I love myself some apple desserts and this one was perfection. The puff pastry was so buttery and flaky, lovely baked apple slices inside…CARAMEL AND CARAMEL ICE CREAM? Well I know what dessert I will order next time, no regrets!

IHOP – Honolulu, HI

Sometimes, you just gotta eat. You don’t want to cook and you just want to eat some good ole American Breakfast. IHOP is just that. Yup, I read the reviews beforehand (spoiler alert: they aren’t great) but I figured I could get some not terrible food. Was it good? Ehh…food was alright. A bit pricey if you ask me. The service was a bit inattentive because it was a bit busy, would I return? Well, not anytime soon.

Appetizer Sampler | $12.99

Philly Cheese Steak Stacker | $13.49
Signature favorite is stacked with grilled Philly sirloin steak and thinly sliced onion, then topped with melted American cheese on a perfectly grilled roll.
Country Fried Steak & Eggs | $16.99
Get an 8 oz. fried beef steak smothered in country or sausage gravy, then served with two eggs*, hash browns and two buttermilk pancakes.

This was my entree, sorry I didn’t get a picture of the pancakes! This was just alright. The country fried steak was breaded heavily and deep fried too long, so it was too hard for my liking and not enough gravy to soften it. The eggs were cooked perfectly, there are hash browns hiding underneath the country fried steak. Wouldn’t recommend it, you can get better CFS at other restaurants.

Tangö Contemporary Café – Honolulu, HI

Tangö Contemporary Café has been a favorite of ours for quite a few years. Absolutely love their food including dessert (which I don’t always partake in). The service is great, awesome free parking, and of course the food is good. I would recommend calling in a reservation beforehand, they don’t get crazy busy but when I called twice within a month, the whole restaurant was closed for a private party. Let’s get to the food!

Salmon Board | $13.00
Gravlax, Smoked Salmon Rillette, Roasted Garlic and Herb Labneh, Pickled Cucumber, Rye Bread

I know there’s supposed to be a difference in the two salmons but it tastes the same to me? (shoulder shrug emoji). I feel like this dish has changed from the first time we got it, in a good way! It used to come with a certain bread I wasn’t a fan of. I like the crispy salmon skin too! Perfectly crisp.

House-Smoked Duck Breast and Duck Leg Croquet | $27.00
Herb Polenta, Balsamic Demi Glace

I decided to try something different this night. My usual go-to dishes include the lamb (YUM!) or the beef short-ribs…how was this dish? It was okay, not great but not bad. It looks better than it tastes I think, left me wanting some Chinatown Roast Duck. I’m also not a great fan of the polenta – wish it was a bit creamier.

This is my friend’s go-to dish, and how can you go wrong? Steak and Shrimp? Delicious! I’ve tried it and it is great!

Kona Coffee, Vanilla and Italian Chocolate Ice Cream with Chiffon Cake

One of my favorite desserts in a restaurant. Simple choice but sooo good. The flavors just work so well together and I really enjoy the lightness of the chiffon cake against the rich ice cream. If you like the taste of coffee, you will love this dessert!

Yard House – Honolulu, HI

Yard House is a good ole American restaurant to me. A great selection of food and drinks, I don’t come here for stellar service or atmosphere but do enjoy the food! This post includes dishes from two visits, the second visit…to my dismay was the Saturday of Saint Patrick’s Day weekend. Yeah, I didn’t realize that until after I put in my wait-list request on their website. Also due to this fact, I think my wait time was still 2 hours. The initial wait time was 1.5 hours so I arrived then and was still given a buzzer to wait for about 20-30 mins more. I think this was due to Saint Patty’s day so I won’t poo poo their system just yet. Let’s get to the food!!

Sunset Sangria | $11.50
new amsterdam vodka, aperol, la perlina moscato, citrus agave, passion fruit, seven falls rapids red blend, strawberries, black cherry, pineapple, mint

Okay, there was some confusion when I first put this drink order in. They have this Sunset Sangria and a Sunkissed Sangria. Well I order Sunset and our waiter decided not to write orders down (why do waiters do this) and kept repeating back Sunkissed to me…and it was just confusing. I got the right drink in the end so cheers to his memory. It was delicious. Sangria is always delicious.

Fried Calamari | $13.25

One of my favorite appetizers here, great dish. Perfectly cooked and love the spin on their dipping sauces.

Poke Nachos | $14.75
marinated raw ahi, avocado, cilantro, serranos, green onions, nori, sesame seeds, sweet soy, sriracha aïoli, white truffle sauce, crispy wontons

A little pricey yes, but delicious. We practically licked the plate clean. I think it’s a pretty good serving size for the price, would recommend!

Turkey Burger | 13.75

Out of all the dishes on the menu, this is one of my go-to’s. If not, the dish I always order. I know what you’re thinking, a turkey burger? Really, Jenny? Yes, really. They really nailed down a great recipe for their turkey burger, I prefer it over any burger any day. Everything just works in this burger, it’s delicious. I even let my kid brother try this burger and he then loved it too. A kid liked it, just try it.

Clam Chowder | $3.75 (add-on for Turkey Burger)

Eh, it was okay. A bit salty but I felt like something soupy that night. I usually actually get their Tomato Bisque which I enjoy a lot but felt like the chowder that night. I can’t say $3.75 is a good price, especially if you get the tomato bisque.

Mini Trio Sampler | $11.25
cheesecake brûlée, peach apple cobbler, chocolate soufflé cake

This was a nice selection to share! I gotta say we were pretty stuffed so we didn’t enjoy the dessert as much as we should have. Biggest surprise, my favorite dessert was the peach apple cobbler. It was delicious!! I think if I were to order dessert again, I would just get the full serving of a peach apple cobbler. Hmm, I’ve been into cobbler lately…may have a recipe to share soon-ish.

Mike’s American Grill – Springfield, VA

I had a work trip to Virginia and was flown in literally for the one day meeting. Don’t get me wrong, I was incredibly grateful for the travel. We were flown in late Saturday night, got in late Sunday afternoon…a meeting all day on Monday and then flown out early Tuesday morning. I honestly, never adjusted to East Coast time. In fact, I didn’t sleep at all on Monday night after the meeting. It was insane…I don’t think I’ve ever done that before (yes, I am that cool). Anyway, Monday night was the only night I had to try a restaurant so here it is! I did my research beforehand and really wanted to check Mike’s American Grill out. This restaurant was super close to the hotel so that was great and the food pics looked great…with so many high reviews! How did it go?

Complimentary Bread Basket

The two donut hole looking pastries were actually probably that? There was a thin coating of sugar on them. Okay, I looked them up, they are called Aussie Rolls! I didn’t get to the raisin (?) bread? And a nice cheese bread, we didn’t partake in this too much because we had an appetizer and entree coming!

Special Appetizer of the Day: Crab Dip with Lavash • $14.00

We were really excited to try this dip but it was pretty mediocre. The dip was a bit salty and not very “crabby,” and I don’t think the lavosh is a good accompaniment. I would have preferred a flat bread, but they seemed so open that maybe you could have requested that? I wouldn’t get this dish again.

Drunken Rib Eye • $31.00

Certified Angus Beef® marinated in our Great American Pale Ale…with mashed potatoes & roasted cremini mushrooms

Well…here is the dish we waiting for. Sounds great, looks great…nothing but high marks on their yelp page. And how was it? Oh…I had such high hopes. But guess what? It was FULL OF SALT. This restaurant was located on Backlick road, and I cracked that it was more like saltlick road, get it? I’m just full of fun to be around, trust me. The potatoes were good, the three mushrooms (lol) were good but it was really had to eat through this steak because of how salty it was. Someone had a prime rib and that looked super good…should have gotten that instead. 🙁

THIS WAS THE STAR OF THE NIGHT. Yes, a side salad. It was DELICIOUS. I don’t usually rave about a salad, but the level of detail in each topping was impressive. I loved that the salad came with dates and cranberries. Sorry, but where have dates been all my life? It was delicious. And the slices fresh tomatoes, they had some kind of Italian herb oil on them too. Full of flavor. So I will digress, I didn’t feel like a champagne vinaigrette and asked for ranch dressing. Their ranch dressing is like homemade, chock full of fresh herbs. Oh man, I am just salivating at this picture…over a salad. If all salads tasted like this, I’d be a vegetarian, no problem.

Liliha Bakery – Liliha, HI

I still haven’t checked out the Nimitz location and I’m not sure if I plan to anytime soon. I guess I’m gonna try to stay loyal to the original. I hardly get to eat at their diner but when I do, it’s always so nice. They just serve very simple comfort food. Nothing fancy but something about it is just so nice. One night, after running a ton of errands, I had very little options of what I could eat for dinner. I stumbled upon Liliha Bakery and they had just enough seats for us! It was fate. I didn’t get too many pictures but I will share my meal here!

Famous Butter Rolls with their own jelly. This is the famous neon jelly I see in all the pictures. I don’t know if I was starving or what…but this tasted SO GOOD. I don’t even usually like jelly/jam but this was so ono. The freshly toasted buttery roll with the sweet (but not crazy sweet) jelly, I am salivating as we speak. I want to return back just to order a bunch of these to gobble down at home.

141011-02Here is what I got for dinner. Meat loaf with gravy, rice and tomato salad. Um, for those who go to Liliha Bakery – do they just throw a glob of mayonnaise onto the salad? Hahaha I know it wasn’t ranch but I’m a bit afraid to think it really was just a glob of mayonnaise (it was huh?).

How was the meat loaf? I thought it was all right. Tasted very home cooked – nothing spectacular but edible. Do you know what I mean? I would definitely come back again! Wish I knew when their slow times for the diner was…

The Cheesecake Factory – Waikiki, HI

I haven’t been to The Cheesecake Factory in forever. First, I don’t enjoy waiting nearly 1.5 hours to get a table. Second, the Royal Hawaiian Shopping Center parking lot feels SO far from the restaurant. I mean the restaurant is literally at the other end and I for the life of me can’t stop getting lost within the shopping center getting back to the car. The parking validation doesn’t do much anymore – you still have to pay money. Still, it’s not a bad rate for parking as long as you don’t have to wait 2 hours to get a table. We did a take-out order and boy…it isn’t much better. You can only put in the order right when they open, no faxing and no online system. No curbside pick-up so I had to circle Waikiki until my co-worker ran back out with the food. Then, I still had to block up traffic to get her in the car! Oh and did I mention Cheesecake Factory is pricey? Yeah, it’s pricey. But you can’t beat the selection – there’s something for everyone! The cheesecake is expensive but tasty. Well, let’s take a look at the dishes we ordered!

I can’t comment too much on the other dishes because this is the one I got! Doesn’t it look so good? This is the first time I tried it and I am so glad I did! It includes crispy chicken breast over basil pasta and parmesan cream sauce topped with proscuitto and arugula salad. It all works very well together!
