Costco: Tagliatelle Grilled White Chicken & Portobello Mushroom Sauce

I saw this package at Costco a few months ago and was intrigued. You know what I loved even more than the 8 minutes in a microwave thing? They provide the microwaveable bowl! No dishes? My lazy soul has been sold. I was scrolling through the many pictures I have yet to upload and happened upon this one and thought the timing was perfect because it’s going on sale at Costco this week (Thursday to be exact).

Here are the contents, ready to go! In the provided microwaveable bowl.

Fresh pasta!

Portobello Mushroom Sauce

Sliced Chicken Breast

Finished product! Nothing like a dump and heat up dish. How was it? I would have loved a bit more pasta because there is a LOT of chicken meat! Overall I thought it was pretty good. I don’t remember how much I paid but it’s going to be $3 off with the new coupon book so give it a try! Let me know how you like it. 😀

Where Have I Been?

Soo…I finished a milestone in my life and I think it’s been more than I had expected. I’ve fallen into a bit of a funk, maybe it’s just a period where I question what to do now with my life. I don’t quite have the answers yet so I’ve been resting and taking it easy, catching up with hobbies and still going to work everyday. I think I do need a break from it all but haven’t planned any trips yet. I seem to have lost the motivation for many things…including this blog. Nothing is wrong with me, just trying to slowly get back into the swing of things in life.

I did want to share a silly thing I’ve gotten into…or have been into for a while. Have you folks heard of slime? The homemade slime kids play with? I definitely got into it. It’s both therapeutic, fun to make…and I love how creative you can get with it. I’ll leave you with some of the slimes I have made…I apologize ahead of time. Haha!

Black Butter Slime – mixture of clay and slime. Oh the texture! Beautiful and lovely to play with.

Here are three different slimes and I love the colors! This was before I was making my own so I was buying them online. Oh boy…but now I’m buying all my own supplies to make them. I don’t know which one is more expensive. Haha

This is a slime I like to call Trix Cereal. Haha..simple white slime with multi-color foam balls.

Avalanche Slime. This one includes different colors of clear slime and a white glue slime to create a nice marbling look. You guys must think I’m crazy now. I’ll go back to food posts, I promise.

Odds and Ends

Hey folks. I write this post as a semi-rant but also looking for advice. Not quite sure if I should pursue this further…if you are interested, please read on. If not, feel free to scroll down to some food porn down below. 🙂

I recently took my car into my dealer’s service station to get its last complimentary service done. This service included a required safety check since I hit the two year mark. The customer service representative that signed me in was very nice as he always is. I told him about a loud squeaking when my trunk opens and closes so he said he would look into it.

About mid-morning, I get a voicemail mentioning a few things. Air filters should be replaced but does not need to be done right away, windshield wipers need to be replaced before safety check could be given (who knew?), the trunk issue is covered and they would have to pick up a park to get it fixed (good thing I never spray em with WD-40 ah?) and there was a nail in my rear tire. I called them back and said no to the filter changes, yes to the windshield wiper since I wanted the safety check done and found out the tire patch job was covered by warranty. Great.

Then I get a call at about 3:30 or so that my car is ready so I would be picked up by the shuttle to get my car. The pick-up is very smooth, in fact, the customer service rep lets me know that he took care of the safety check charge so I thought, wow, that’s pretty awesome of them. My services were done, my safety check complete, tire and trunk fixed, I happily left on my merry way to drive back to work.

So I drive out of the dealership and start heading down the road when my car starts ROCKING AND ROLLING. I already knew. Something was wrong with the rear tire they “fixed.” I immediately turned down the next street and fearfully hoped my car would make it back to the dealer. I initially though, the patch was no good, the tire was flat! As I turned on the street, there two cops attending to another accident. One of the cops starts flagging me down and pointing at my tire wildly. I roll down my window and tell him I know but I’m trying to get back to the service station. He tells me, you should really pull over. So I do. Awkwardly.

I get out of the car and look at the tire. I could not believe it. The tire they fixed was hanging on by one lug nut. My tire comes with 5, and here I am looking at my tire barely holding on with one left…and this one was about to come off too. Forreal. So I start calling the service station, no one picks up initially. The cops, bless their souls, both gentlemen were so nice. One of them told me he will drive over to the service station to let them know to come over…I was so close to the service station still. As he goes, I am still calling and they finally pick up. I tell them what happened and of course they panic too and he tells me he’s going to talk to the manager. I say okay and wait there.

Then I see the cop drives back and comes towards me telling me he found two lug nuts on the road. He even had to stop traffic because one of them flew off into the middle lane. This man, what a saint right? I thanked him but I was still very shaken. Both cops were in disbelief that the service station did this. The irony was not lost on me that I drove away with safety check in hand and one tire loose.

The cop that helped me initially told me he was going to leave because he was actually off-duty already but the other cop offered to stay with me since the accident he was assisting with was done. Nice right? Both cops still couldn’t wrap their heads around what happened. One of them even asked if he could take pictures, cause well it’s unreal and I said ok. Shoot, I should have taken pictures too.

So after a little while of waiting, I see one of the service station workers walk over. I really hope this was not the manager because this guy casually walks over cell phone in one hand and coffee cup in the other. I kid you not. Seriously with the coffee? No urgency. He’s on the phone, probably about my car but he doesn’t say a single word to me. Not a single apology. He continues on his phone and when he gets off he just goes straight into what the plan was. They would have to remove the lug nuts from the other tires to put onto this tire so we can drive it back to the station. I hand him the two that was found on the road. Still nothing coming from this guy’s mouth.

Then another service station worker drives in with all the tools they need. They start working on my car to get the tire back on. It’s really the second worker doing all the work. The first one that comes just stands there and then only helps out when it’s obvious someone has to hold the tire as the second worker screws it back in. Jesus. They get the nuts back on and the second worker signals that I can go into my car in the passenger seat, I guess he will be driving my car to the station. The second worker gets in the car with me and apologizes for what happened, I mean, was that so hard for the first guy to do?

We drive to the service station and I get greeted by the customer service rep, he apologizes profusely. I can tell they all shocked by what happened, not as shocked as me of course. He tells me they want to keep the car overnight to check up on it the next day and make sure there was no damage done and that everything is working fine. They issue me a loaner car and I leave.

The next day, I get a call at about 2 in the afternoon. It’s the customer service rep and he’s telling me that the technician is still working on another project and that he would work on my car next. I ask for a timeline because well…it’s already 2 in the afternoon. Give me some timeline on what I would expect. He said it would be the same day. Okay. I get a call at about 4 and my car is ready. I get there with my coworker and we are told they checked everything thoroughly and did a test drive and everything was okay. I asked if anything happened later on, can I bring it in? The answer is yes, as it should be. My coworker asks him if they fell asleep (LOL!) but poor customer rep guy, he’s not the issue. He mentioned that the tire was the last thing they did and it won’t happen again. I don’t know how my tire being the last thing they did was reason for them not to screw on the lug nuts…but once again, I’m not blaming the customer service rep.

My car seems to be working fine. I mean, they should really be thankful I wasn’t heading home. I could have ended up on the freeway and imagine if my wheel flew off in the freeway! And how thankful should they be that the cops were there when I turned to make me stop? I received a voicemail from the customer service rep the day after asking if everything was okay, I didn’t call him back. Sure everything is okay for now. I think I’m more affected emotionally than anything else. I have this paranoia with tires and cars so this certainly did not help at all.

My asking of advice…do you believe I should pursue this further? I don’t mean anything serious but I’ve been told I should write in about this. It was such a dangerous incident and that I should really let upper management know. My coworker mentioned that if they were smart about this, they would minimally offer me an extended warranty. Technically this warranty would not cost them anything especially if the car is okay as they said it was. I’ve been waiting it out to see if they even send me a little of apology but nothing has come. But it can’t be good that I’m sharing this with all my friends and colleagues, and while I’m not sharing their name publicly on my blog right now…word still gets around. Those two cops will certainly tell this story to their friends and family too. Ah, what are your thoughts?

Wow, that came out a lot longer than I expected. So sorry! I will reward your patience with some food pictures…

160310-01Homemade Banh Mi

I love the sandwiches from Bale. I’ve always gotten the tuna sandwich for some odd reason, but it just goes so well with the pickled vegetables, cucumbers and cilantro. It’s my go to sandwich. Well I bought the bread from Bale and the pickled veggies from Bale…hahaha. So I don’t know how homemade this is…but I love that I can put as much cilantro as I want in this sandwich. It was delicious!

160310-03Kahlua Chocolate Cake

Did I tell you one of my most favorite desserts is kahlua cake? My coworker makes this every year and the first time I tried it, I fell in love, it is just so moist and chocolate-ty. I made this one in a 13×9 pan but it just isn’t the same. You need to make it in those mini foil pans, which will yield 3 of them. Why? The glaze you pour over soaks up much better in the smaller pans than in one big pan. More edges of the cake mean better glaze distribution. I always look forward to the holidays because of this cake…

160310-02Kahuku Garlic Shrimp

Well not really Kahuku but the recipe is shrimp truck inspired. That is all garlic. All garlic, all the time makes Jenny happy. I found a recipe to make this online and it came out DELICIOUS. Terrible for you considering all the butter but I guess I can say YOLO? Anything that can help me eat more of this. Fresh squeezed lemon and a bowl of steaming white rice and you’re garlic…I mean golden (sorry, Freudian slip).

New Wing

Have you folks been to the new wing at Ala Moana yet? It’s quite beautiful to look at, but not much to browse through. The stores that are currently open don’t really appeal to me and I guess almost half of the stores to be opened have not yet. I took these pictures a few weeks ago right before the frenzy of holiday shopping and they had the decorations up already! Oh how I will miss Christmas. I am happy that we still have cooler weather though!

160105-01

160105-03

A lot of nice sitting areas! I walked by this weekend and there was a performer on the stage which was nice.

160105-02Okay, so what’s up with this? On many occasions, I’ve seen kids playing with the koi fish. Literally. I’ve seen kids petting the koi fish which I am sure is unhygienic for both the child and the fish. I don’t know if you see it in this picture but the kid in the gray shirt is poking the fish with a stick! And what do the parents do? Just sit there. No reprimanding at all! Gosh, where is the respect nowadays? The parents should be teaching it! If not, how are the kids going to learn? Ah vent over. Hope all is well.

Thankful

Every year, my co-worker, Linda feeds our office to our very brim. Well, this year was a bittersweet experience. Linda retired last week but before she left, she cooked us one final feast. Well her husband did but does that really matter? They went all out, turkey, homemade dressing (a deluxe style stuffing), homemade gravy and garlic mashed potatoes. I’m drooling just thinking about it…and I didn’t have turkey this past Thanksgiving so it was perfection.

160103-01

The delicious lupcheong dressing and turkey.

160103-02

Look at that! He sliced up the turkey perfectly and separated the white and dark meat. I like the dark meat, how about you folks?

160103-03Dressing made from scratch? Yes, please.

160103-04Perfect mashed potatoes. I like my mashed potatoes smooth but these had great texture.

160103-05Gravy from the drippings, flavorful and not too salty at all.

160103-06Speaking of homemade, my other co-worker made cookies for everyone. They tasted great, sorry I didn’t get a picture of the cookies! It was two shortbread cookies drizzled with caramel. It was wrapped in parchment paper and tied up with twine, how rustic! It’s little things like this that warm the heart…

160103-08Here’s something I experimented as a Christmas Eve treat for my office. Chichi Dango Mochi with a chichi dango heart. I made a two layered mochi (green and white for christmas) and topped it with a red heart (or as red as I could get it). Chichi Dango definitely takes a bit of effort in making and cutting (oh the cutting!) but the effort was totally worth it. I’m so glad I got it to work!

160103-07Extra hearts? Thank god for Katakuriko. Aren’t these hearts the cutest? I can’t wait to experiment more with this mochi recipe, I bet it would sell well in a craft fair too! Ahhh…if anyone wants the recipe, let me know and I’ll try to post it up!

She is alive!

Bad blogger, bad bad blogger. Gomen! You folks must be tired of hearing this by now. This semester has been rough. I don’t know if you folks have ever taken a statistics course but it certainly has kicked my butt. Tonight was the submission of my final paper. Of course with a stats class, I get to take a final exam next week. Oh boy. Wish me luck, I need it. I’ve been cooking quite a bit but not as much journaling of my cooking. I still take a lot of pictures of food so I may just photo bomb you folks with random pictures of food. So glad the break is coming up soon! I hope you all are doing great.

I leave you with a picture I recently colored. Yes, adult coloring books are the latest rage and I am totally into it! Take care folks.

Beware: Ramblings

There’s a feeling I can’t shake tonight and since it’s bothering me, I just wanted to share it out. I just feel so bothered. Sometimes I have lunch with a friend during my lunch hour and she comes to campus and parks in my parking stall as I drive us out to our destination of choice. When I come back, she leaves and I take my spot back. It’s not exactly against the law but certainly used for my convenience.

Parking at my work is a nightmare. Our parking lot is always full and always has cars sitting on the side waiting to pick kids up. Anyway, I return today and there were two cars in the lot stopped on the side. Both cars are parked past the stall. My friend gets in her car as I am sitting before this stall with my blinker on. When she drives off, I back into the stall. So as I’m backing into the stall, I see the driver lady’s arms go up in anger in the car that is 4 stalls away from me. But honestly, they were past this stall and just sitting there so how was I to know? As I’m finishing my parking, her male passenger gets out of the car and starts yelling at me. I hate confrontation and I certainly don’t appreciate a male yelling at a female over a parking stall. He yells something about them waiting for such a long time in the lot. I don’t get out of the car but I decided to be cool about it and say that I’m going to move my car. He doesn’t hear me obviously cause my windows are up and he yells WHAT at me like with such anger and disdain…I didn’t care to aggravate the situation so I move my car and start looking for another stall. We all pay money for permits to park in our zone and there were stalls available outside of this specific lot but I guess they refused to park farther. I found a stall right outside of this lot and walked back to work, they had already parked and left their vehicle. Thank god, I didn’t want to run into them.

Anyway, I’m glad I did what I did. I don’t think I was even wrong in the beginning, isn’t it the rule that if you’re past the parking stall that frees up, it’s no longer your spot? I guess I feel unsettled because I didn’t appreciate the confrontation and the fact is, we now continue to share the same parking lot. I feel uneasy and really hope nothing comes of it. If any type of revenge is exacted on my car from today events, I think I’ll really reach a breaking point. It’s been such a hard few months and I’m just mentally and physically exhausted. Sorry for an all text and all venting post, I can’t even sleep thinking about this right now. My coworker unsettled me more after I got back telling me to watch out for them. Ahhhh! I tell myself that it should be okay since I did give them the spot, I just hope nothing further comes from this.

150220-02Okay, I lied. Not an all text post because I’m posting this picture again because I really love this picture and wish I could just fall into this snow and have a nice slumber (especially with this humid weather). Thanks Connie for the picture.

So it begins…

Remember how I said I would procrastinate by blogging to not study? Yes, it started. I’m not even halfway into the first chapter and I already decided to do a post on here. Yay. I want to say I’ve been too busy over the summer to post but the truth is I’ve been very tired and not as inspired as I have been in the past. Just trying to get to a good space again to post. It has been so DANG hot that I barely want to step foot into a kitchen. I bought some okra on Friday and I’m looking forward to making something with it. I enjoy the slimy-ness, I guess that’s why I enjoy natto. Here’s a few random pictures for you to enjoy!

150830-01I made kimchee gyoza the other week

150830-02I love when they start steaming because then you see the red kimchee through the translucent skin…

150830-03I’m not posting up a recipe yet…it’s really just a mixture of ground pork and chopped up kimchee. The kimchee has such great flavor that I don’t need to add any additional seasoning. My only complaint about this is that it’s dry. I think I’m going to try to add some long rice to the filling – that will add some moisture! I will let you folks know how it goes.

150830-04I had a bibimbap day once because that’s my favorite Korean dish. The twist? I used a fake ground beef to make the beef topping. It was good! Here are the side veggies I made. Ugh it took so much effort…haha. The green strips are zucchini, the others are shiitake mushroom, carrots, bean sprouts and the green mound is spinach. Isn’t it crazy to see how much spinach cooks down? It’s crazy! I love veggies like this, I should make it again.

Potpourri

How did potpourri come about? And why did the t become silent? Just a random thought for the day. This weekend is going to be full of rest mixed with cleaning mixed with horror. Horror? The fall semester starts on Monday for UH. Yes. Enjoy the terrible traffic again. Punahou does make it terrible but UH makes it worse. This semester as a warning is going to be insane already. I have three big events I’m helping to plan that will all take place before October 6th. I wouldn’t be surprised if I disappeared off the face of the earth during this time. I am also planning to take two classes. I don’t know if I’ll be able to handle it. I’ll have to go to class this week and see how the assignment schedules are. Then again, my need to procrastinate on all my assignments may lead me to blog more often. Who knows? The only reason why I wouldn’t want to drop any of my courses is because I bought my textbooks already and boy were they expensive this semester!

No complaints of course. Still happy to take courses for free. Yay. I hope everyone is doing well. I’ve been pretty busy lately because I’ve had to work on my kitchen. It’s coming together! Almost surreal. Hope to have pictures to share on it soon. 🙂 Here are some random pictures to share…

150822-01Lamb Shanks from Costco. Doesn’t it look good on this package? I love lamb….

150822-02So like, this is how it looks after baking in the oven. Okay it doesn’t look anywhere close to the package but the taste is great! Tasted good. Don’t waste those bones, get some good marrow in there to suck out. A bit pricey but tasty.

150822-03

150822-04Have you ever had pig’s feet? I’m sure I have in the Chinese style. This is pig’s feet, Korean style. It kinda looks like how it tastes. Very gelatinous and umm that’s about it. Not a big fan. I can say I tried it though!

150822-05Bossam! I created this plate, doesn’t it look pretty? I bought one of those ready to eat packs from Palama Supermarket and added kimchee to serve up. Was delicious. Nowhere near Jong Ga but we can’t go there anymore so I have to learn how to make this myself!

Japanese Biscuits for the Win

This picture comes with a story. During my first trip to Japan, we went to the Tokyo Metropolitan Government Building. After we perused the top floor, my friend checked out the gift shop and purchased a package of biscuits. I’m not a fan of biscuits but she let me try one and my life changed. It was so delicious and I always remembered them. I also couldn’t find it afterwards during the trip. So for this trip, I had a mini mission in mind…to find those biscuits again. I randomly look for them here in Hawaii when I go to Nijiya but I never found them. Guess what? I found them! I saw it in a convenience store in Japan and picked it up…150618-01If I learned anything from my previous trips, I knew that when I find something – I have to buy it. There’s a chance I won’t find it again. Thankfully I did, because I really didn’t spot these cookies again during this trip! How do I explain the taste of these? They are both savory and sweet at the same time. Perfect amount of saltiness while maintaining the sweetness of a biscuit, they are toasted and aren’t too hard or soft. I mean, how can a person really sell biscuits? Just buy a pack if you see them and try it for yourself. You won’t be disappointed.
