Poi Freshness?

I went to Costco the other day and decided to take down some information about the poi they sell for an event later on.  I noticed they put up a poi freshness chart which as I look at…can’t quite grasp.  I can tell the first day of the week is gonna be the best time to get it.  But what do the other days mean?  I certainly don’t think I would want it on Saturday – whatever orange means.  That’s the thing, they don’t even tell you what these colors correspond to!  Funny yeah?

    The colors coorespond to which day of the week the poi was delivered, these colors are ON the bags. So…dependant on how you like your poi, you know which color to buy.

    The color “tie” on the bag corresponds to the color chart.

    The colors are usually correspond to the tape that ties the top of the bag. The older the poi, the more sour it is…the taste preference is up to you! 🙂

    Thanks guys! It shows how little I know about poi huh? I talked to my coworker today and she explained it to me too…lol. I didn’t realize there were levels of sour! I’m glad my rambling got comments that taught me something!

    Been a poi grinder since baby time. Here’s a suggestion. If you don’t finish all the poi in one sitting, add a thin layer of water on top of the poi that’s in a container. This prevents the air from interacting with the poi and slows down the souring process of the poi further. Cover container with container lid. Next day, drain water and start grinding.
